Ingredients

  • 1 pound firm white fish fillets like cod
  • 2 tablespoons blackening seasoning
  • 2 tablespoons olive oil
  • 8 small corn tortillas
  • 1 cup shredded green cabbage
  • 1 ripe mango diced
  • 1/2 red onion thinly sliced
  • 1/4 cup cilantro chopped
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Method

  1. Prepare the blackening seasoning by mixing all spices together.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Cook the fish for 3-4 minutes per side.
  4. Make the mango slaw by mixing the cabbage, mango, red onion, cilantro, and lime juice.
  5. Warm the corn tortillas in a dry skillet or directly over a flame.
  6. Assemble the tacos: place fish on the tortilla, top with mango slaw.
  7. Serve immediately with extra lime wedges on the side.

Notes

For a refreshing twist, consider adding jalapeños to the slaw. Reheat leftover fish gently in the microwave wrapped in a damp paper towel to maintain moisture.
