Ingredients
  

  • 1 pound medium shrimp peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon chili powder
  • Juice of 2 limes
  • 8 small corn tortillas
  • 1 avocado pitted and peeled
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro chopped
  • Salt to taste

Method
 

  1. In a bowl, combine shrimp, olive oil, minced garlic, chili powder, lime juice, and salt. Toss to coat.
  2. While the shrimp marinates, prepare the avocado crema by blending avocado, sour cream, cilantro, lime juice, and salt until smooth.
  3. Heat a skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer and cook for 2-3 minutes on each side until they turn pink and opaque.
  4. While the shrimp are cooking, warm the corn tortillas in a dry skillet or on a grill, about 30 seconds per side.
  5. To assemble, layer shrimp in the warmed tortillas and drizzle generously with avocado crema. Top with extra cilantro if desired.
