- In a bowl, combine shrimp, olive oil, minced garlic, chili powder, lime juice, and salt. Toss to coat.
- While the shrimp marinates, prepare the avocado crema by blending avocado, sour cream, cilantro, lime juice, and salt until smooth.
- Heat a skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer and cook for 2-3 minutes on each side until they turn pink and opaque.
- While the shrimp are cooking, warm the corn tortillas in a dry skillet or on a grill, about 30 seconds per side.
- To assemble, layer shrimp in the warmed tortillas and drizzle generously with avocado crema. Top with extra cilantro if desired.
