  • 1 lb ground chicken
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup fresh parsley chopped
  • 1 large egg
  • 2 cloves garlic minced
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the ground chicken, grated Parmesan, breadcrumbs, parsley, egg, and minced garlic.
  3. Season the mixture generously with salt and pepper.
  4. Shape the mixture into one-inch meatballs and place them on a parchment-lined baking sheet.
  5. Bake the meatballs for 20 minutes until golden brown.
  6. Remove the meatballs and smother them with marinara sauce and mozzarella cheese.
  7. Return to the oven and bake for an additional 10 minutes or until the cheese is bubbly.
  8. Serve warm, garnished with additional parsley and more Parmesan if desired.
